Oven baked sweet potato fries

I absolutely love sweet potato fries and guacamole! Sweet and salty and spicy all in one bite. The sweet potatoes are oven baked with coconut oil, salt and smoked paprika and chilies. And holy guacamoly, it’s completely without garlic or onions so it’s perfect for your fructosefriendly diet.

Sweet potatoes are really healthy. They are a perfect source of four essential micronutrients: vitamin C, thiamin, potassium and manganese. Unlike potatoes, these veggies do count towards our 5-a-day rule because they are low in starch. They are inexpensive and they are really versatile.

Oven roasted sweet potato fries

Sweet and Salty and Spicy all in one bite. The sweet potatoes are oven baked with coconut oil, salt and smoked paprika and chilies.

Servings: 2 people
Ingredients
  • 2 large sweet potatoes
  • 2 tbsp coconut oil
  • 1 chili
  • 1 tsp smoked paprika powder
  • salt
  • black pepper
Instructions
  1. Preheat the oven to 200ºC. Wash the sweet potatoes well under cold water. You can peel the sweet potatoes but if you prefer you can leave the skin on. Cut each sweet potato lengthways, so that you end up with 8 wedges.

  2. Add baking tray with baking parchment and then sprinkle over salt and black pepper, sweet smoked paprika and chopped chillies. Drizzle coconut oil over it and then toss everything together to coat.

  3. Bake for 35 to 40 minutes, or until golden and cooked through. Turn over sweet potatoes after 20 minutes.

  4. Serve them with Guacamole and anything from your BBQ.
