Healthy and delicious za’atar roasted aubergine and couscous

I‘m going to start healthy into the new year. At least I’m going to try. Actually it should be easy because healthy doesn’t mean boring. Especially not with this delicious za’atar roasted aubergine with couscous and almonds on Greek yoghurt. Lots of people don’t like aubergine, mostly because it’s not prepared well.

This aubergine recipe is really simple and easy. The not so secret trick is to salt the aubergine and let it lose water for a while. Also, it’s important to roast it long enough so that it looses all its bitterness. The flavour pairing of aubergine, mint, olives, za’atar an Greek yoghurt is so fantastic. I’m absolutely sure you are going to love it.This oven roasted aubergine with couscous is not only a fantastic vegetarian recipe, it’s also great for all fructose malabsorption sufferers and people on a gluten-free diet.

Za'atar roasted aubergine and couscous

Healthy and delicious za'atar roasted aubergine with almond couscous on Greek yoghurt

Servings: 2 People
Ingredients
  • 1 Aubergine
  • 200 gram Greek yoghurt
  • 200 gram Couscous
  • 1 handful almonds
  • 1 bunch fresh mint
  • 2 tbsp Calamata olives
  • 1 fresh lime
  • 2 tbsp za’atar
  • 1 tsp nigella seeds
  • 2 tbsp olive oil
  • Salt
  • Pepper
Instructions
  1. Cut the aubergine lenghtwise in quarters and out salt on it. Put it aside and let it loose water for about 30 minutes. 

  2. Prepare the couscous according the package instructions. 

  3. Wash the parsley and mint, pad dry and chop roughly. 

  4. Preheat the oven to 170C. Pad dry the aubergines and place them in an oven dish. Drizzle with olive oil, season with pepper and za’atar. Put it into the oven for about 30 minutes, until golden brown.

  5. Meanwhile prepare the couscous. In a bowl mix couscous, parsley, mint, juice of a lime, olive oil, calamata olives (in half), salt and pepper. Stir together well and set aside.

  6. When the aubergine is ready add a spoonful of yoghurt on your plates. Add the aubergines and couscous and sprinkle with nigella seeds. Bon Appetit!
