I’ve been going crazy over asparagus season for the last couple of days. One of my favorite creations of late is this raw shaved green asparagus with cucumber, radishes and burrata with a lemony spring herb vinaigrette. Try it, it’s grand!

I think green asparagus is perfect for salads and really delish raw. Use a potato peeler and shave the asparagus in thin slices. It’s so delicate and looks so nice! It’s a perfect starter, wonderful light and breezy, like a summer day. A perfect companion for your shaved asparagus salad is a glass of Silvaner or Sauvignon Blanc!

One of my favorite creations of late is this raw shaved green asparagus with cucumber, radishes and burrata with a lemony spring herb vinaigrette. Try it, it’s grand! 

Servings: 2 people
Ingredients
  • 300 gram green asparagus
  • 4-5 radishes
  • 0,5 cucumber
  • 1-2 burrata (depending on appetite)
  • 1 bunch green spring herbs (parsley, sorrel, coriander, dill, etc.)
  • 1 lemon (juice)
  • pinch salt
  • pepper
  • 2 tbsp olive oil
Instructions
  1. For your spring herb vinaigrette: Mix lemon juice, olive oil and your spring herbs in a blender until smooth. 

  2. Prepare your vegetables. Cut off the bottoms of the asparagus spears and slice lenghtwise with a peeler. Wash your radishes and chop thin slices. Wash the cucumber and cut brunoise, into 1-2 cm cubes. 

  3. Combine raw asparagus ribbons, sliced radishes and cucumber cubes on plates and add the burrata. If you don't have a burrata you can also use mozzarella. Drizzle vinaigrette over your veggies. Season with salt and pepper, and serve!
