Lovely butter dipped radishes

I love butter dipped radishes! These pretty, whole radishes dipped in butter are quick and easy to make and are a perfect spring side dish. The only trick is to get the texture of your melted butter right! It really doesn’t get any better, something so simple but enjoyable complex. It’s a bonus point for picnic or trip to the Biergarten!

Servings: 2 people
Ingredients
  • 100 gram butter
  • 1 bunch radishes
  • fleur de sel
Instructions
  1. Gently wash your radishes under water, removing the dirt and dry them well. Temper the butter by placing the a bowl with your butter over a pot of boiling water, instead of directly heating the butter. Let it heat gently and whisk occasionally until it thickens. It's perfect when the texture is smooth and thick and the color is pale. If it gets too hot, it will get clear and it won't work. In this case you can leave it to cool down and start all over again.

  2. Dip your radishes into the tempered butter and place them onto a baking parchment. 

  3. Let the butter on the radishes set in the refrigerator until ready to eat.

  4. Serve with fleur de sel for dipping. Bon Appetit!
