Brighten up your breakfast or Picnic with lovely beetroots. Beet, has been gaining popularity as a new super food due to studies claiming that beets and beetroot juice can improve athletic performance, lower blood pressure, and increase blood flow. They also have a great presence in the middle eastern cuisine. I made puree of them for this vibrant spread with Za’atar, Avocado, Watercress, Feta Cheese and radishes.
Delicious Middle Eastern-style beetroot dip
Cook your beets. Once your beet is cooled and peeled, quarter it and place it in your food processor. Blend until only small bits remain.
Add remaining ingredients and blend until smooth. Taste and adjust seasonings as needed, adding more salt, lemon juice or olive oil if needed.
