The best way to stay hydrated during the summer heat is this vibrant and refreshing cucumber and mint cooler. It’s quick to prepare and will keep you cool! You won’t even need a recipe. Crisp cucumber, fresh mint, lime juice topped with sparkling water is all you need to quench your thirst! Get out your high-speed like my MengK and prepare this vitamin bomb!  By the way, is it Gin o’clock yet? Just add 4 cl Hendrick’s Gin and turn it into a fresh gin cucumber and mint cooler! Absolutely fabulous!

Fresh cucumber and mint cooler with lime juice and soda

  • 1 fresh and cold cucumber
  • 1 bunch fresh mint
  • 2 lime (juice
  • 1 tbsp rice syrup
  • sparkling water to top up
  1. Wash and cut your cucumber in 4 parts. Wash the mint and squeeze your limes. Add the cucumber, mint, rice syrup and lime juice to your blender and blend until smooth. You can use a strainer if you don’t like little cucumber bits in your drink. 

  2. Add icecubes to your glasses and pour cucumber and mint drink over it. Top up with sparkling water and decorate with mint leaves or slices of lime. 

  3. If you like, add some Gin and serve it at cocktail hour.

As summer is approaching I’ve made it a goal to drink more water. I usually forget about drinking enough during the day and get a little headache from dehydration. As a fructose malabsorption sufferer I should not drink fruit juices and lemonade so I have to stick to tea or plain water. Which gets very boring sometimes!  But I found a way to make water a bit less boring and more like a treat. Make your own infused water, it has basically zero calories and gives you a refreshing way to stay hydrated. And not to forget to mention it looks so beautiful!

I don’t have a special recipe for you for this fruit and herb infused water, just go with the flow. Use your favourite fruit and herbs you have in your garden. These four a my best combinations: Cucumber-Ginger and Mint, Blueberries and Mint, Cucumber-Lime and Camomile and the beautiful Grapefruit-Lavender and Rosemary.

Strawberries and tahini not only make a dream like flavour couple, but both are full of healthy nutrients, making this smoothie the perfect way to kick start your day. It’s quite rich so it’s a great breakfast smoothie, post-workout snack or even a superb summer office lunch. 

Strawberries are packed with vitamins, fiber, and particularly high levels of antioxidants known as polyphenols. They are an excellent source of vitamin C and manganese, and also contain decent amounts of folate (B9) and potassium. Tahini is high in protein – more than most nuts, is very high in minerals and calcium, is easy for the body to digest, as well as being high in unsaturated fats, and vitamins B and E.

Creamy Strawberry Tahini Smoothie

Rich and creamy Strawberry Tahini Smoothie to kick start your summer days. 

  • 1 frozen banana
  • 200 gram strawberries
  • 3 tbsp tahini
  • 2 tbsp rice syrup
  • 2 tsp roasted sesame seeds
  • 200 ml yoghurt or buttermilk
  • salt
  1. Preheat oven to 200°C. Wash and quarter the strawberries. Put them in a small oven dish and cover with rice syrup and add a pinch of salt. Mix well and let it sit for about 10 minutes. Now roast the strawberries for about 20 minutes until they are soft and release their juices. Remove from the oven and let them cool. (You can easily make this ahead a day before.)

  2. Put a few strawberries aside for decoration. Now toss the rest of your strawberries into a highspeed blender. Add the frozen banana, yoghurt and tahini and blend until smooth. If you like a thinner texture add some cold water or some ice cubes. Top with the leftover strawberries and roasted sesame seeds.

Whenever I use raw beets for my smoothies I usually press them with my juicer. So I only get the lovely beet juice and don’t have the junky bits in my drink. If that’s too much hassle just make sure you use a good, high-speed blender. If it’s not quite as smoothly as you’d like add a few ice cubes to thicken the smoothie, so has a slushy texture and will hide the little bits. 

Beetroot-Cucumber-Blueberry-Smoothie

Let’s starting this sunny day with this beetroot-cucumber-berry-smoothie. It’s so good and a perfect breakfast or post-workout snack!

  • 1-2 beet roots
  • 1 cup frozen blueberries
  • 0,5 cucumber
  • 1 tsp rice syrup (optional)
  • water or yoghurt if you like
  1. Place all of the ingredients in a blender, and blend until smooth. Add the water or yoghurt a little at a time, until the smoothie has reached the desired consistency. If you want a thicker smoothie, add a handful of ice. Taste, and add a little rice syrup if you’d like it sweeter. 

  2. Note, if you don’t like the junky bits of the raw beet in your smoothie, use a juicer to press your beets and then add the juice to the rest of the ingredients and blend.

I love experimenting with different combinations of fruits for my smoothies. This one is definitely one of my favorites: a Blueberry Coconut Smoothie. I can admit, I could have this smoothie every day! And I’m pretty sure you will love it too!

This tasty blueberry-coconut-smoothie is packed with healthy blueberries! The combination of blueberries, coconut and bananas will send you on a vacay to some tropical island It’s really quick and easy to prepare a is great breakfast or post-workout snack.

I usually use a combination of frozen and fresh fruit for my smoothies because I like the cold mixture. Keep working with a blender, stirring, and blending until smooth. I like mine rather thin and usually add some extra water. For a thicker consistency, add less yoghurt.

Blueberry Coconut Smoothie

Summer vibes in a jar for you! Look at this tasty blueberry-coconut-smoothie, it’s a great breakfast or post-workout snack!

  • 200 gram frozen blueberries
  • 1-2 banana
  • 200 ml coconut milk (no added sugar)
  • 100 ml yoghurt
  • Coconut flakes, mint and fresh blueberries for topping
  1. Combine frozen blueberries, bananas, coconut milk and yoghurt in a blender and blend for 3-4 minutes, or until smooth. Add some water for thinner texture. Serve immediately.

On weekdays I’m often in a hurry in the mornings and I used to skip breakfast. So instead of skipping breakfast I’m preparing breakfast smoothies now which keep me going all morning! Because of my Fructose Malabsorbation I use fructosefriendly fruit and veggies and add no sugar to my smoothies. This Banana-Basil-Lime smoothie tastes so fresh and summery. It’s absolutely delicious and a great breakfast or post-workout snack! 

Banana-Basil-Lime Smoothie

Start your day with this Banana-Basil-Lime Smoothie. It’s delicious and a great breakfast or post-workout snack!

  • 2 bananas
  • 1 bunch basil
  • 1 lime (juice)
  • 250 gram natural yoghurt or buttermilk
  • 1 tsp rice syrup
  1. Place all ingredients in a blender and blend until smooth. Add a little water if needed to achieve your desired texture. Pour into glasses and serve.
