Growing up in Austria means eating a lot of dumplings to get fit and strong. There are all sorts of dumpling recipes, bacon dumplings, spinach dumplings, cheese dumplings, liver dumplings, apricot dumplings and many more. I guess we Austrians love dumplings! I can’t decide which dumplings are my favourite, but I would like to share this lovely Strawberry Curd dumpling recipe with you. Maybe it will become your favourite dumpling recipe!
Beautiful Austrian Strawberry dumplings
In a bowl mix together well curd, egg, semolina and flour. Add a pinch of salt and grape sugar. Leave it to rest for 30 minutes.
On a floured work surface shape the dough into a roll and divide into 8 parts for 8 dumplings. Put some flour on your hands and one by one gently press these flat between the hands. Place the strawberry into the dough, shape the dough around it and seal well. Apply some more flour to your hands if needed, form dumplings and place on a floured board.
Bring a large pot with slightly-salted water to a boil, reduce the heat, place the strawberry dumplings into the water and allow to simmer gently for 10–12 minutes. Stir carefully from time to time to prevent the dumplings from sticking together.
For the breadcrumb cover: melt the butter in a pan and dd the breadcrumbs, cinnamon and roast until golden brown. Careful this happens quite quickly. Add grape sugar at the end.
Remove the cooked dumplings and roll them in the sweet cinnamon breadcrumbs. Arrange on your plates, add some fresh strawberries and dust with some more grape sugar if you like!
